Steps

Soak red chillies in water, leave it for about 10 mins or longer.

Soak half bowl of anchovies in water, leave it for about 10 mins or longer.

Add the paste ingredients and make paste out of it.

In a small pan, deep fry the anchovies and set aside.

In a big pot, add oil on heat 4, about 5 mins then add the shallots/onions and cook for about 2 mins. Do not brown it.

Add paste into the pot and cook for about 5 mins. Then lower the heat to 3 and continue cooking for about 20 mins, keep stiring.

When it's nearly done then add sugar and salt and mix well.

When it's done, add the other half of anchovies into the pot and serve.
