Turkey Enchilada Casserole
This is based on alissia.montanez recipe with a couple minor changes. Every time Cook Pad updates I have trouble finding this recipe.
Steps

Brown ground turkey in pan and cook through.

Spray bottom of 9x13 or 11x15 pan if you are using larger amounts of ingredients.

Drain and rinse black beans. Drain rotel. Mix beans and rotel together and add to turkey and onion.

Mix enchilada sauce with cream of whatever soup.

Spread a thin layer of sauce mixture on the bottom of the pan.

Layer 6-8 tortillas.

Add enough meat mixture to cover the tortillas (about 1/2 of it).

Cover with about 1/2 the sauce mixture.

Top with enough shredded cheese to cover the sauce

Repeat layers with remaining ingredients.

Bake at 375 deg F until bubbly and nicely browned (about 15-25 minutes).
