Sautéed Yu Choy (aka Choy Sum)

I’m lucky to have access to a great Asian supermarket and I’ve been slowly working my way through their bountiful vegetable selection. Yu Choy (also known as Choy Sum, or 菜心) is a leafy vegetable that tastes a little like a cross between bok choy and spinach, with a slight bitterness. It cooks quickly and makes a great side dish.

Ingredients

6 to 8 servings
  1. ~1 pound Yu Choy
  2. 1 tablespoonoil (I use olive oil)
  3. 1 tablespoonsoy sauce
  4. 1 tablespoonoyster sauce
  5. 1/8 teaspoonground white pepper
  6. 1/2 teaspoonsesame oil

    Trim the ends of the Yu Choy. Remove any wilted or yellowed leaves. Place the Yu Choy in a large bowl and toss with water plus a few generous teaspoons of baking soda. Agitate gently, and allow to sit for approximately 15 minutes.

    While the veggies soak, begin boiling a large pot of water on the stove. Also set up a large frying pan or wok on another burner.

    Drain the water, and rinse the veggies well.
    If any of the stems are very thick, I slice them vertically in order to allow for more even cooking.

    Mix the remaining ingredients in a small bowl, and whisk well to combine. Set aside.

    Plunge the Yu Choy into the boiling water, and allow it to cook for only 30 seconds. Remove immediately and drain off excess water as well as you can.

    Immediately heat the sauce mixture in the frying pan until it is gently bubbling. Transfer theYu Choy into the pan, and toss the veggies until they are coated by the sauce.
    Do not cook the veggies for any longer than 30 to 45 seconds!

    Transfer to a serving platter and enjoy!
