Ingredients

  1. 1medium-sized cauliflower head, cut into florets
  2. 1/2 cupfresh parsley, finely chopped
  3. 1/2 cupfinely chopped green onions
  4. 1/2 cupall-purpose flour
  5. 1 tablespoonall season
  6. 1 teaspoonseasoned salt
  7. 1 teaspoonsmoked paprika
  8. 2eggs
  9. 1/2 cupboiling water from the water used to boil the cauliflower
  10. vegetable oil for frying

    1. Steam or boil the cauliflower florets until they are tender but not mushy. Drain and set aside to cool.

    In a large bowl add the chopped green onion, parsley, all-purpose flour, salt, seasoned salt, all seasoning and cauliflower water.

    Add the mashed cauliflower to the mixture and mix well until all the ingredients are combined and the mixture holds together.

    Heat vegetable oil in a deep frying pan or pot over medium heat.

    Take a small portion of the cauliflower mixture and shape it into a small patty or ball.I use an Ice cream scoop. Repeat with the remaining mixture.

    Carefully place the fritters into the hot oil, frying them in batches to avoid overcrowding the pan. Fry until they turn golden brown and crispy on all sides.

    Serve the Palestinian cauliflower fritters hot as an appetizer or as part of a meal. They can be enjoyed with tahini sauce, yogurt dip, or a side of salad.
