First, peel the potatoes and cut them into fries. Rinse and drain them, sprinkle with salt, then fry in vegetable oil until golden. Set aside.

Pick and wash the parsley, soak it in water for about 15 minutes, then drain and finely chop. Slice the onion into thin wedges and mix with the parsley. Add sumac, salt, citric acid (or lemon juice), and olive oil. Set aside.

Wash and drain the chicken breast, then let it sit for about 15 minutes to remove excess water. Add all the spices—shawarma spice blend, curry powder, mixed spices, black pepper, allspice, salt—and olive oil. Let the chicken marinate for about 3 hours.

Grill the marinated chicken strips on an electric grill, turning them so they don't burn, until all the chicken is cooked. Then transfer to a nonstick skillet and sauté with a little olive oil or ghee for about 10 minutes. Remove from heat and set aside.

Take fresh pita bread and spread a little red pepper paste on it. Add some fries, mayonnaise, grilled chicken, and a bit of the parsley-onion salad. Roll up the bread, place it on the electric grill, and brush the top with oil to give it a nice shine and flavor. Serve with pickled cucumbers on the side.
