In a bowl, combine all the ingredients and mix well.

Heat oil in a medium nonstick skillet (use enough oil to prevent sticking). Once the oil is hot, pour the mixture from the bowl into the skillet and spread it evenly to fit the pan.

When one side is cooked, use a plate or a pot lid to help flip the tortilla, then cook it on the other side until done.

Serve with a side of rice and salad.
