Ingredients

  • 2 packsfrozen cut corn
  • 2Pat's butter (unsalted)
  • 1/4fine diced onion
  • 1red jalapeno diced
  • 1poblano chili diced
  • 1 tbconsummé powder

Steps

  1. 1

    Saute the veggies in the butter a little until slightly soft. The onion has to disappear into the mix at our house

  2. 2

    Add the consummé and corn stir together and let simmer on low while dinner cooks.

  3. 3

    Check season. I sometimes add a touch of garlic powder, or Adobe powder or my home blend chili powder

  4. 4

    To be true elote set the table with mayo, crema, parmesan cheese, & chili sauce

Mostly I just wanted to save my recipes because I always forget how I made really good food. It's so much easier to save them this way. If someone else can enjoy the recipe or just the inspiration, well then, all the better.
