Thukpa

Thukpa is a nonveg noodle soup which is widely popular in Himalayan regions Like Laddakh, Sikkim, Northeast India and also in Tbbat, Nepal and Bhutan. Of course each regions Thukpa is different according to local influence. I am sharing today my way of making thukpa.

Thukpa is a nonveg noodle soup which is widely popular in Himalayan regions Like Laddakh, Sikkim, Northeast India and also in Tbbat, Nepal and Bhutan. Of course each regions Thukpa is different according to local influence. I am sharing today my way of making thukpa.
Steps

Heat Olive oil in a saucepan and add onions.

Saute for a minute and then add ginger-garlic paste or crushed.

Saute for few more seconds and then add chicken pieces and vegetable pieces.

Fry for few minutes.

Pour in 1 litre of hot water and salt.
- 6
Cook in high heat for about 15 minutes.

Reduce the heat and add tomato paste.
- 8
Mix well and cook for 5 minutes more.

Add soya sauce and black pepper. Give it a mix.

In a separate pan cook noodles according to the instructions given.

Drain and transfer them in soup bowls.

Add chopped spring onion to he soup before removing from heat.
- 13
Pour hot soup with vegetables over the noodles.
- 14
Sprinkle some chilli flakes or fresh chopped chilli and serve immediately.
