Yes there are many variations tomatoes okra and so on have been added. Succotash was a staple during the depression era. Here is the one I grew up on.

Ingredients

  1. 2 cupslima beans
  2. 2 cupscorn
  3. 1/2 teaspoonkosher salt
  4. 1/8 poundsmoked bacon 2 slices
  5. 1/2 cupwater if not using canned corn and juices

Steps

  1. 1

    Cut the bacon up and fry till almost crispy just enough to harvest the drippings.

    Add all the rest of the ingredients first the lima beans.

    Then the corn and corn juices if using canned, use the water if not, and simmer for 20-25 minutes.
