Ingredients

  1. For the dough:
  2. 2.2 lbssifted flour (about 1 kilogram)
  3. 1 tablespoonsugar
  4. 1 tablespoonyeast
  5. 1 tablespoonsalt
  6. 1/2 cupplain yogurt (120 ml)
  7. 1/2 cupvegetable oil (120 ml)
  8. 2 tablespoonspowdered milk
  9. 2 cupswarm water (480 ml), or as needed depending on the flour type
  10. For the filling:
  11. 2.2 lbsground beef or lamb (about 1 kilogram)
  12. 4tomatoes, finely chopped
  13. 3onions, finely chopped
  14. 1 tablespoonred pepper paste (optional, can be omitted)
  15. 1green chili pepper, finely chopped
  16. Salt to taste
  17. 1/2 teaspoonmixed spice

Steps

    In a large bowl, combine all the dry ingredients and mix well.

  2. 2

    Add the oil and yogurt, then gradually add the warm water while kneading. The more you knead, the better the dough will be. Knead for about 20 minutes.

    Once kneaded, brush a little oil over the dough, cover it with plastic wrap, and wrap the bowl with a clean kitchen towel. Place it in a warm spot to let the dough rise.

  4. 4

    To make the filling: In a large bowl, combine all the filling ingredients and mix well.

  5. 5

    Once the dough has risen, divide it into small balls or your preferred size.

  6. 6

    Roll each ball into a circle, place some filling in the center, and spread it slightly. Fold the edges over if you like, or leave them open as desired.

    Bake the rounds in an electric oven and serve with plain yogurt, pomegranate molasses, and salad.
