Blend the cloves, thyme, 2 whole peppercorns, a piece of onion, garlic to taste, and vinegar. Pour this mixture over the washed pork, mix well, cover, and refrigerate for about 3 hours or overnight.

Boil the tomatoes and guajillo chiles. Once cooked, add them to a blender with a piece of cochinita pibil marinade, a little of the chile cooking water, and a splash of cola. Blend until smooth.

Pour the sauce over the pork. Line a pot with washed and softened banana leaves, add the pork, and place a bay leaf on top.

Peel and dice the potatoes, then add them to the pork. Bake for about 2 hours. Check the pork after 1 1/2 hours to see if it's done; if not, check again at 2 hours.
