Jollof rice & ring plantain with peppered Chicken

In a sizeable pot cook rice (half cooked-not completely soft) and wash, use a sieve to drain water and set aside Place a pot on heat, add oil, when hot, add sliced onions, sachet tomatoes paste and the fried tomatoes paste.

Add chicken stock (water from boiled chicken) and extra water; not too much. Add salt, knorr cubes, black pepper,curry, thyme (to taste) and allow to boil

Add rice, ensure the water level and rice is equal to avoid burning/over cooking and allow to cook until there's no more water. Turn off heat. (remember to keep heat moderate, not too high nor low)

For the chicken; place frying pan on heat, add oil and allow to get hot (not too hot though) add chicken to fry, ensure you flip sides to avoid burning.

For Sauce; wash, peel and blend; onions, ginger, fresh pepper & garlic. Pour it into a pot, add little water, groundnut oil and palm oil, Salt & Knorr cubes to taste.

Place pot on heat and allow o cook for 5 minutes. Now add fried chicken to the sauce and stir until all the chicken is covered in sauce.

Heat your oven/electric grill and place your chicken on the rack to steam/roast the sauce into the chicken, flip sides to avoid burning. Take it out when it's almost dried.

Wash, peel and slice plantain and fry. Serve as in the picture above and enjoy with a drink of choice. I used water 😘
