Peel and finely chop the shallot, then add it to a bowl.

Wash some cilantro, chop it, and add it to the bowl as well.

Beat the two eggs and add them to the bowl along with 1/2 teaspoon of baking powder, a pinch of food coloring, the shrimp, and a little salt. Mix well to make the omelette batter.

Heat a little extra virgin olive oil in a skillet, pour in the mixture from the bowl, and cook the omelette to your liking.

While the omelette is cooking, cut a piece of apple into small cubes.

Slice the mini goat cheese log into rounds.

Cut the cherry tomatoes in half.

In a serving dish, add some mixed greens, then top with shredded beet, goat cheese, cherry tomatoes, diced apple, and a handful of walnuts. Place the omelette on top, cut it into portions, and let each person serve themselves as much as they like.
