Steps

Roast eggplant till it becomes soft. Then peel the skin off and mash it.

Now take a pan and pour 2tbsp mustard oil and heat it....then add cumin seeds in it.

Add chopped ginger-garlic to it...and add chopped onion and heat it till it becomes translucent. Then saute it.

Now add 2 medium chopped tomatoes and green chillies to it.

Then add turmeric powder, coriander powder,red chilli powder and salt to taste

Now add roasted mashed eggplant to it...and saute it on medium flame.

When it leaves oil...means your bharta is ready..and garnish it with coriander leaves.

For navratn missi roti. - Take multigrain flour in a bowl and add chopped Capsicum,spring onion,ajwain,mustard oil,green chilli,coriander leaves to it.

Make a dough of the above ingredients.

Heat a pan and roll that small ball from the dough to a chapati.

Serve it hot with the ghee/butter on top..
