Rinse the vegetables in water. Peel and then chop the potatoes and carrots into small pieces.also finely chopped the ginger and green chilli.

Heat oil in a pan. Add cumin seeds,add chopped ginger,green chilli.saute for about 20 seconds.

Then add all the vegetables.add the salt 3 tsp water then close the pan and cook for 10 mint.

Now check the pan and add more salt if required. Lastly add coriander leaves then serve the aloo gajar matar with hot chapatis.
