Heat oil in a wok add 1 cup oil, add deep fry chopped potatoes, fry it till it's well cooked, once done remove on absorbent paper

Next add diced capsicum and fry fr 1min remove on plate

Now in another pan heat 2tbsp oil add ginger garlic paste and fry for a minute, next add onion and saute till translucent, now add tomatoes and fry for 2mins

Next add all powder masala's,salt and fry for 1min to this add fried potatoes and capsicum

Stir the vegetables until well quoted with the spices. Cover the pan, turn the heat to low and simmer the aloo capsicum sabzi for about 5mins, stirring occasionally.

Once done, turn off the heat, stir in the freshly chopped coriander leaves and transfer sabzi to a serving plate

Serve it with puris or phulkas
