Some stuffed potatoes to brighten up your lunch (and your heart)!
Tip: If you make the filling the day before and keep it in the fridge, it turns out so much better!

Peel and dice the potatoes. Boil them in salted water for 20 minutes.

Once the potatoes are cooked, mash them until smooth.

Make a well in the center and add 1 egg.

Mix the egg thoroughly into the mashed potatoes.

For the filling: Dice the onion and sauté it with the minced garlic until golden. Add the ground beef, salt, and a pinch of cumin. Cook for about 8 minutes, then let it cool.

Dust your hands with a little flour. Take some mashed potatoes and flatten it in your hands like a small patty.

Place a spoonful of filling and a piece of hard-boiled egg in the center. Carefully close the mashed potatoes around the filling.

Coat the stuffed potatoes in flour. Beat the 2 eggs and dip the potatoes in the egg, then coat with breadcrumbs. For extra crunch, you can dip them again in egg and breadcrumbs.

Fry in plenty of hot oil. Turn carefully so they don't break.

When golden brown, remove and drain on paper towels. Serve with a fresh salad!
