Ingredients

2medium sweet potatoes
1large cucumber
1large capsicum
2medium tomatoes
1small onion
Olive oil
Ground black pepper
Salt

Steps

1

Wash and boil potatoes till tender, remove skin and mash, wash allvthe viggies and dice.

In a clean bowl, add all veggies and mashed potato, olive oil as desired, salt to taste and ground black pepper to garnish.
