Not fermented. More like a refrigerator pickle. Fresh kraut is full-flavored cabbage that has the benefit of overnight aging to infuse it with vinegar to hit you up front, but mellow immediately, with a hint of caraway.

Not fermented. More like a refrigerator pickle. Fresh kraut is full-flavored cabbage that has the benefit of overnight aging to infuse it with vinegar to hit you up front, but mellow immediately, with a hint of caraway.
Steps

Core, slice and process cabbage in food processor with the shredding blade.

Mix vinegar, water, salt, sugar, and caraway seed until salt dissolves.

In large bowl, pour vinegar solution over cabbage.

Refrigerate overnight, stirring every 2-4 hours.
- 5
Remove cabbage into storage container. Reserve and refrigerate liquid for future use, if desired.

Serve as side dish, or eat as salad.
