Our market stopped selling my hubby's favorite latin brand jarred pickled onions so I had to get creative. I'm sure I will modify this every week as I make them but this basic recipe is a good starting point.
Actually this was modified from Natasha's kitchen marinated mini sweet pepper recipe. I will use it for many pickled products.

Ingredients

  1. Cleaned baby onions used 9 could have fit 6 more in Qt Ball jar
  2. 1red jalapeno sliced in strips
  3. 2dried chili arbol
  4. Brine for pickling
  5. 1 cwater
  6. 1/2 cvinegar i used equal seasoned rice & plain white vinegars
  7. 5 Traw sugar
  8. 11\2 T course sea salt
  9. 6crushed garlic cloves
  10. 1cardamom pods crushed
  11. Pinchdill & dill seed less than 1/4tsp
  12. Pinchthyme

Steps

  1. 1

    Clean onions & peppers place in boiling water to blanch slightly just till color changes be sure not to cook. Just blanch.

  2. 2

    Combine brine/marinade in jar & shake or stir until dissolved

  3. 3

    Add your onion & peppers to your brine be sure to cover with the liquid

  4. 4

    Dare your family to stay out of them till they marinate for a couple days & get rich charging them for not being able to ❣️🤔hubby never makes it 24 hours🤗

Mostly I just wanted to save my recipes because I always forget how I made really good food. It's so much easier to save them this way. If someone else can enjoy the recipe or just the inspiration, well then, all the better.
