Ingredients

2 servings
  • 10Irish potatoes
  • 1 cuprice
  • 1green capsicum
  • 3medium sized tomatoes
  • 1bulb onion
  • 2 clovesgarlic
  • Water
  • to tasteSalt
  • Cooking oil

    Peel the potatoes and cut into pieces. Chop the onions, garlic, tomatoes and capsicum.

  2. 2

    To the cooking pan, add some oil and then add onions, then garlic and capsicum. Allow them to brown then add the tomatoes and a little salt. Mix well and allow the tomatoes to soften.

  3. 3

    Add the potatoes and mix well then add 2 cups of water. Let it cook until a thick soup is formed. Remove from heat

  4. 4

    To another pan, add small amount of oil and measure 2 cups of water with the cup used to measure rice,add to the pan with some salt and allow it to boil.

  5. 5

    Then add the rice and let it cook till it drains all the water.

  6. 6

    Remove from the heat and serve with the Irish potatoes.
