Steps

  1. 1

In a bowl, beat 3 whole eggs. Add 1/3 cup sugar (70 grams) and 1 espresso cup of olive oil. Mix well, then gradually add enough all-purpose flour to form a dough. Transfer the dough to a floured surface and knead until it is no longer sticky.

  2. 2

Roll the dough into ropes and cut them into small pieces (make them small, as they will puff up when fried). Fry the pieces in batches in hot oil and drain them on paper towels.

  3. 3

Bring a small jar of honey to a boil with 1 tablespoon of water and 1 tablespoon of vermouth or Marsala. Add some of the fried struffoli, then quickly remove the pot from the heat (otherwise they will absorb too much honey). Use a slotted spoon to drain them and place them on a serving plate.

  4. 4

    Decorate with colored sprinkles.
