Potato Cake
A simple and quick addition to any breakfast meal.
Steps

Start by peeling the skin from the potatoes.

Half of the potatoes need to be boiled until cooked for 8-10 minutes then mashed.

The other half need to be grated. Wash to clear the starch. Then use a towel to dry as best you can.

Pour out 120 ml of milk, the rest is for the potatoes. Mix in the egg.

In a bowl Mix the grated potato with the flour and also the baking powder.

Next add the milk/egg mixture and mashed potato then mix until all the ingredients have binded.

Have a large frying pan with a lid ready on medium heat, add butter and oil. Next add around 3 tablespoons of the mixture to make a round shape now, now with the lid on leave for around 4-5 minutes until you see small bubbles on the top, now flip them over and give a couple more minutes.

Serve with plenty of butter and great to have with a breakfast with eggs and bacon.
