Tomato and caramelised onion tart with feta stuffed crust!
On holiday in France with friends who lived their I was served this dish so easy so yummy!
Cooking Instructions

Thinly slice onions, add to pan with oil and butter and cook for 12 to 15 minutes stirring frequently

Add sugar, red wine vinegar and a pinch of salt and continue to cook for a further 15 - 20 minutes or until consistency resembles marmalade

Whilst onions are cooking line 9 inch tart dish with pastry leaving an inch over hanging around the edge, (make small slices/air holes in base to avoid a mountain pie!). Chop feta cheese into small blocks and place around the edge of the pie and fold over the pastry - Stuffed crust!

Spread the caramelised onion in the centre of the pie. Thinly slice tomatoes and evenly cover the onion spread. Cook in the oven for 20~25 minutes or until pastry is a golden colour.

Today was Farmers Market day in the village close to my house. It was a lovely, a bit cold but sunny day so it gave me a chance to walk over and look around to see what they had to offer. There was a wide variety of things to choose from vegetables, fish, cheeses etc.. 🙂 I wanted to make this tart, so I was hoping to find all the ingredients I needed. While strolling through the market I saw the wonderful vegetables, that I just had to buy. 🙂I know most think that this dish is considered more of summer dish but to be honest, I love to eat soups to tarts all year round. Very simple recipe and so tasteful…the peppers along with the zucchini, aubergines, and onions, just have this powerful taste. After I took it out of the oven I just had to try it to see how it turned out, what more can I say than it just made me smile. 🙂 Foodzesty
