Olive Oil
2small tomatoes (or 6 cherry tomatoes)
Grated Cheese
2 sprigsBasil (chopped up)

Slice up tomatoes, grate cheese, slice up basil.
And crack & beat eggs in separate dish.

Fry tomatoes and then take from pan and put aside.
Add beaten egg mix into frying pan on high-ish heat.

Leave in pan for a few minutes.
Add Cheese, Tomatoes & Basil to one side of the semi-circle of omelette. Fold over omelette and leave to cook for a couple more minutes until happy.
