I like to buy a 3lb log of cheap ground beef and use it for tacos, burritos, nachos, quesadillas, taco salads and even just throw it into some pasta. Feeds me for days! Pico de Gallo is important for anything you make with this. (Oooo now I’m gonna post a Pico recipe) Reheat the meat and add crushed nacho chips, shredded lettuce, pico, salsa, shredded cheese and sour cream for taco salad, put the meat on tortillas with your taco fixins, add it to a flat tortilla with cheese and top with a tortilla for quesadillas, make a quesadilla and top THAT with cheese and pico for a “Mexican pizza”, throw it into a large tortilla with the fixins of your choice for a burrito... or just make some pasta and toss some in there with a little salsa verde-—- perfection. Taco Bell makes 57 things with 8 ingredients... why can’t we!?

Open beef log. Crush up by hand into a large pan. Add all spices except the packet of taco seasoning. Cook on low/med heat until mostly browned. There will still be a little red in the beef. A LITTLE.

Drain 9/10ths of the fat. Add the water, taco seasoning packet and diced onion. Put back to heat, stirring regularly and break up any remaining large chunks of meat. Approximately 8-10 minutes.

Remove from heat. Continue stirring occasionally while it cools to make sure the juice gets into the meat. Add a bit more spice if you want. Use your judgement. P.S. Tajin and hot sauce won’t hurt at this point 🤫😉

After it’s cooled, use and refrigerate leftovers. Quick cook with so many delicious possibilities, use your imagination!
