Now that blue berries are in season a cupcake that is moist and melts in your mouth is all you need.

Assemble all ingredients. Line cupcake trays. Preheat oven at 180°c. Put blue berries in a bowl plus 1 table spoon flour toss to coat well this helps in preventing fruits from sinking at the bottom. Set aside.

In a large bowl mix flour baking powder and salt, then sift make a well in the center.

Melt butter in microwave 15sec

In a smaller bowl combine melted butter, milk, eggs, sugar, vanilla essence, lemon zest and juice, whisk well to combine everything.

Add the wet ingredients to dry ingredients and whisk

Add blue berries, mix by folding in the mixture until well mixed. Scoop into lined cupcake tray holes 3/4 full.This batch makes 24 cupcakes. Bake for 20 min until a toothpick inserted comes out clean.

Remove from oven and from tray onto a cooling rack. Let them cool completely then serve.
