Potatoes are so versatile you can cook them however you want, leaving the skin on gives them an extra crunch and flavour

Wash the potatoes thoroughly to remove dirt and debris but carefully so as not to scrape off the skin. Chop into cubes then dry with clean kitchen towel

Sprinkle generously with corn flour and rub into the potatoes. This adds to the crispiness of the potatoes

Heat oil in deep pan. Add the potatoes and deep fry until lightly golden. You want them a little cooked. Take potatoes out of the oil and set in a bowl. Rest for a few seconds before frying the second time.

Return the potatoes into the reheated oil and fry until golden brown. Garnish with cilantro and chili flakes. Serve with your favorite sauce
