Lauki. A very verstile and healthy vegetable that can be had in various forms. Be it lauki ke kofte, dal dudhi, dalgosht, lauki ki kheer, lauki ka halwa and so on. Even it's peels are beneficial as they have high level of vitamin C. It helps in maintaining the blood pressure and also brings down bad cholesterol. So next time don't throw away the peels. Prepare this delicious sabzi using the peels. :)

Ingredients

  • 1Skin of medium sized lauki
  • 1/2fresh coconut grated
  • 1/2 tspkalonji
  • 2whole red chillies
  • 1tejpatta
  • 1/4 tsphaldi/turmeric powder
  • 2green chillies slit
  • 1 tspfresh coriander
  • To taste Salt
  • 5-6moong dal vadis
  • SomeOil

Steps

  1. 1

    Par boil the lauki peels, strain and keep aside

  2. 2

    Heat oil and deep fry the moong vadis and keep aside.

  3. 3

    In the same oil add the red chilies and tejpatta. Saute for a few seconds. Add kalonji and let it splutter. Remove from heat and now add the lauki peels and mix well. Add haldi, salt and coconut and mix well. Cover and cook for 5 minutes. Remove lid and add the salt and sugar. Mix well. Slightly crush the vadis and add to the lauki. Sprinkle coriander leaves and serve hot.
