Put Milk, Butter and Flour into a Saucepan and cook over a medium heat until Thick and Glossy. Cook out for a further 2 minutes beyond this stage

Whisk In Yolks and 100g Cheese

Whisk Whites to Peak and Fold into Cheese Mixture

Distribute between ramakins, put into a Bain marie and bake in oven. Put an oven cloth in the bottom of the B.M to stop ramakins sliding around.
