Chocolate-blueberry cake

Sieve the flour, baking soda and baking powder in a bowl and set it aside

Cream the sugar and margarine till light and fluffy

Add in the eggs 1 by one and continue beating untill well blended. Add in the vanilla essence/extract and mix well

Fold in the flour mixture alternating with butter milk until a well mixed batter is formed

Add in the hot coffee and beat with a mixture. Drop in the handful of fresh blueberries and fold them in. Bake at 170°C for 35-40 mins.

Whip the cream and mix part of it with blueberry jam

Divide the cake into two and apply the whipped cream in the middle

Ice the top with the remaining whipping cream
- 9
Pour the ganache on top of the cake till it drizzles over to the sides. Drop some blueberry jam on top of the ganache. Enjoy the cake
