Ingredients

  1. 3 tbspveg oil
  2. 2 stalkslemongrass (bruised)
  3. 1 tbsplemongrass puree (or thinly sliced)
  4. 1 tspsea salt
  5. 1 tspbrown sugar
  6. 3 tbsptamarind paste
  7. 800 gmonkfish, roughly cut
  8. 10okra (cuts both end)
  9. 10cherry tomatoes
  10. 4 sprigsthai basil leaves
  11. --paste---
  12. 10dried chillies (soaked in boiling water for 10 mins)
  13. 1medium union
  14. 1shallot
  15. 3 clovesgarlic
  16. 2.5 cmginger
  17. 2 tspturmeric powder
  18. 1 tspshrimp paste

Steps

  1. 1

    Blend the paste ingredients and set aside.

  2. 2

    Preheat a saucepan over medium heat. Add oil and cook the lemongrass and puree until fragrant.

  3. 3

    Add the paste then reduce the heat to low and cook for 2 mins. Stirring occasionally.

  4. 4

    Add the salt, brown sugar, tamarind and cook for a min.

  5. 5

    Add fish, okra cherry tomatoes in.

  6. 6

    Add 800ml water bring it to boil, then reduce the heat to low, simmer until fish is cooked.

  7. 7

    Serve with rice.

Living in Dublin with my Irish partner who is celiac. My recipes are Gluten Free (GF). Most of my recipes are Asian food and I use soya sauce a lot in them. Regular soya sauce is not GF, but you can get GF one from supermarkets.
