Heat oil in a fry pan,add cumin seeds and red chillies and let it splatter.

Add garlic and fry till golden brown,add potato and fry, then add pumpkin and tomato and fry for 5 more minutes,add eggplant, spinach,fenugreek leaves,coriander leaves salt and turmeric and close the lid..

Cook until done open the lid and keep stirring until it’s dry.

Don’t cut the vegetables into very small pieces or else it will melt very fast and you won’t get the desired taste and consistency.Serve hot with rotis.
