Ingredients

  1. 1 cupbutter
  2. 1 1/2 cupsgranulated sugar
  3. 3 tablespoonsmilk
  4. 1 1/2 teaspoonvanilla extract
  5. 1 1/2 cupflour
  6. 3/4 cupcocoa powder
  7. 1 teaspoonbaking soda
  8. 3/4 teaspoonbaking powder
  9. 1/4 teaspoonsalt
  10. 1 1/2 cupsready oats

Cooking Instructions

    Preheat oven to 350ºF/180°C

    Line baking trays with parchment paper

  3. 3

    In a bowl mix butter, sugar, milk and vanilla. Beat them together well

  4. 4

    Sift in the flour, cocoa, baking soda, baking powder and salt. Mix together to make a slightly sticky paste.

    Add the oats and mix to combine thoroughly - it's important to use the ready oats (ready brek)

    Make balls (large walnut sized) and place on sheets

    Bake in centre of oven for 10 minutes

    IMPORTANT: Remove from oven and leave to rest on trays for at least 5 minutes - they will be slightly domed as they come out of the oven then will sink and flatten, but most importantly they must harden or they will fall apart upon lifting!

    Transfer to cooling rack

    If making non chocolate, then add another ¼ cup of flour and spices (ginger etc) of your choice
