Bring the butter to room temperature. Place it in a mixer bowl and whisk it until you have a creamy butter. Add the sugar and whip them until mixed well and lightens in colour. Keep stirring and, add small amount of beaten egg at a time. Then add vanilla extract and keep mixing.

Use a strainer and sieve the plain flour, almond meal and salt into the bowl and combine the mixture until you have a soft dough.

Now put the dough in a plastic bag and flatten the dough with hand. Allow the dough set in the freezer for 1 hour to firm up.

After an hour, cut off the both sides of the plastic bag and peel of it as you see in the photos. Coat the cutter with flour and cut cookies.

Place them on a baking tray, lined with parchement paper. Brush the cookies with beaten egg. Place almond flakes top of each cookie.

Place the baking tray into the preheated oven at 160C degree and bake for 10-11 minutes until light golden. Remove from the oven and let cool.
