Ingredients

  1. 2-2.5 lbuncooked chicken breast, sliced 1/4"
  2. 2 cupspenne, cavatappi, or your favorite sturdy pasta
  3. 1 (14.5 oz)can fire roasted tomatoes
  4. 3 cupschicken stock
  5. 2 Tbsptomato paste
  6. 1 Tbsp+ 1 tsp Italian Seasoning
  7. pinchsalt and pepper
  8. 1 tablespoonolive oil
  9. 2 clovesgarlic, chopped
  10. 1medium onion, diced
  11. 3 ozcream cheese
  12. 1/2 cupParmesan cheese

Cooking Instructions

    Season chicken with salt & pepper.

    In your pressure cooker, add everything but the cream cheese and Parmesan, give a good stir, and push the pasta down so it's submerged in the liquid. Close lid and set on manual for 7 minutes. When your timer goes off, allow for 5 minutes of NPR then quick release.

    Add the remaining ingredients (cream cheese and Parmesan) and stir until you have a thickened sauce. (About one minute)

    Garnish with more parmesan and fresh parsley (optional)
