Beetroot velvet cupcakes

Preheat oven to 180°C

Mix beetroot puree and oil till well mixed.

Add sugar and vanilla. Mix well.

Sift together the dry ingredients in a bowl.

Add milk to the dry ingredients and mix well. Slowly mix in the beetroot mixture.

Pour into cupcake moulds and bake for 15 to 20 mins.

For frosting : beat the whipping cream and cream cheese together till you get stuff peaks. Fill in a piping bag and decorate your cupcakes.
