Sweet Potato Salad

I learnt this recipe from my beloved mum. Well, i learnt most of recipes from her.
Sweet potato is fat free and cholestrol free carbohydrate. Likewise lettuce is a good source of dietary fibre.
Therefore, this salad is healthy and colourful, with a tangy taste of lemon. Though, most of the tanginess is balanced by the sweetness of the sweet potato.
I observed that it really make sense when sweet potato is mix with lemon. You can identify that if you try this recipe, or my previous recipe. (Lemon potato rings).
Thankfully if the sweet potato is really sweet. Then you are good to go.
Use plenty of lettuce to make this salad. Because when lemon juice is added, lettuce shrink by osmosis.

Steps

Cut potatoes into cubes, chop lettuce into large pieces, cut onions and 3 tomatoes. (I left the other 2 for garnishing)

In a large bowl, combine lettuce and potatoes together. Add onions and tomatoes

Add seasoning cubes (i ground them first because they are tough enough 🙈 i can't try breaking them and chew off my tongue lol)

Mix all. Squeeze all the lemon and add.

Mix everything

Garnish with the remaining tomatoes.

Salad is ready for serving

Serve alone, or with jollof rice or anything that local salad can be served with.
