Coffee and lemon cake

Nairobi

In a bowl, beat 2 eggs
Add sugar,to your own taste and liking. I used 5 tablespoons of sugar since i really didnt have a measuring cup.
3 scoops of blueband margarine
Mix the sugar and beaten eggs ,and margarine until its fluffy and evenly distributed.
Add in your flour, i used 2 themos flask cups of flour and mix as you pour in milk until you get the desired consistency.
Add your lemon rind and and coffee as you continue mixing.
Once you are contented with the thickness of the dough(sorry i forgot to take the pics), apply margarine in your baking tin.( In my case i used a sufuria, it was a mawe tatu caked baked on a gas cylinder.)and dust the inside using flour, then pour in your mixture.
In a large sufuria place three small stones/pebbles and make sure they can balance the sufuria containing the mixture.
Now place your baking tin/sufuria in the larger sufuria, ensure it sits evenly on the three stones.
Cover the larger sufuria with an airtight lid/sufuria and bake for one hour.
Turn on your gas cooker to medium heat and let it bake!!
Test with a skewer after one hour or when you the cake aroma hits you. If the skewer or toothpick comes out clean, your cake is ready!!
Turn off the heat and let it cool, or serve it hot, however you like it. Enjoy!!
