Ingredients

8 servings
  • 3tomatoes, cut into bite size chunks
  • 3cucumbers, sliced thin
  • 1onion, sliced thin
  • 1/2 Capple cider vinegar (I used 1/4 c of this and 1/4 c rice wine vinegar)
  • 2 Tbspsugar
  • 2 tspsalt
  • 1 tspground pepper
  • 1 Cwater (I used about 3/4 C)
  • 1/4 Colive oil

Steps

  1. 1

    Put all cut veggies in a large bowl. Pour over veggies and give a light mix.

  2. 2

    In a small bowl, mix the water, oil, S&P, vinegar and sugar with a whisk until blended.

  3. 3

    Chill for 1-2 hours before serving.
