Scrambled Eggs with Fish

I didn't have much left over being the end of the month but I previously I had de-salted some fish and frozen it.
Let me say that this turned out awesome. A little spicy but not too much. It had the perfect balance of flavour.

I didn't have much left over being the end of the month but I previously I had de-salted some fish and frozen it.
Let me say that this turned out awesome. A little spicy but not too much. It had the perfect balance of flavour.

Add the fish to cold water overnight. Change the water 1-2 times.

Shred the fillets into small pieces using your fingers.

In a pan or wok, heat the olive oil.
- 4
Add the onion, chilli and garlic and fry for about 3-5 minutes over a low-medium heat or until the onion has softened.

Add the fish and fry for a further 3-5 minutes, stirring regularly.

Add the parsley and the eggs.
- 7
Add in the seasoning and black pepper. Stir regularly. Cook for about 5 minutes or until the eggs are cooked through.
