Aioli Platter From Provence

Michael and I recently returned from Provence! I’m not really sure why we actually came back. Provence is in the south of France and it has great food and amazing wine. Their cuisine focuses on veggies which mirrors my diet so, I was in heaven. We joined in on a cooking class hosted by the cutest lady in her own home. What an experience! Although the cooking class did not feature this aioli recipe, we had a bit of aioli while in southern France so I decided I had to learn how to make it. It is really easy if you have a standing mixer.
While in Provence, we stayed in Avignon which is a walled city. It was May when we arrived however, we woke up to a chilly 46 degrees F, and the Mistral was wreaking havoc. The Mistral is a terribly strong wind that blows in a haphazard fashion throughout Provence. It appears without warning. Over time it has driven people so crazy that historically crimes have been forgiven because “the mistral drove him mad”. So, our cycling trip was cancelled that day. Instead we wandered through some of the tiny villages and taste tested our way through the famous Isle Sorgue market. The following day we visited Arles and visited all of Van Goghs watering holes. We also took a photo in front of my favorite “cafe at night” of Van Goghs. We also checked out the castle in Baux and did a little shopping in St Remy. Not a bad day at all! Ingredients

10-serving
  • Aioli :
  • 2egg yolks
  • 1 cupolive oil
  • 2 clovesgarlic crushed
  • to tastesalt pepper and
  • Veggies :
  • Radishes , washed and sliced thin
  • Green beans , washed and trimmed
  • carrots colorful , peeled
  • grape tomatoes , washed
  • bell peppers baby , washed

Steps

  1. 1

    In a stand mixer add the 2 egg yolks and pressed garlic.

  2. 2

    Mix until forms a thick paste.

  3. 3

    Slowly (VERY SLOWLY) drip the oil into the the paste while mixing. Add a few drops, let mix for a minute, then add a few more drops. Patience is key!

  4. 4

    Add salt and pepper to taste.

  5. 5

    The consistency should be very very thick when finished.

  6. 6

    Arrange the veggies on a platter with aioli

  7. 7

    Voila!
