Steps

Slice the pork and marinate with salt and rosemary for 15 minutes

Preheat your oven to 140 degrees

Peal the potatoes and add to the pork marinade

Put the potatoes in the oven pan on a lower shelf and put the pork on an oven rack above the potatoes and grill for 30 minutes

Chop the onions, tomatoes and mango and mix them together. Season with lemon

After the 30 minutes, remove the pork and serve on a plate. Coat the potatoes with the pork oil till well coated then serve next to the pork and kachumbari
