Ingredients

4 to 6 svgs.
  1. 3boneless skinless chicken breasts
  2. 1 packettaco seasoning
  3. 1jalapeno, diced
  4. 1small onion, chopped
  5. 1/4 cupgreen onion, sliced
  6. 1 cancorn, drained
  7. 1 canblack beans, drained and rinsed
  8. 1 canRotel, drained
  9. 1 cupsour cream
  10. 1 (8 oz.)pkg. cream cheese, cubed
  11. 1 cupgrated cheddar cheese
  12. 1lime
  13. 6-8tortillas

Cooking Instructions

    Place chicken in instapot and add just enough water to coat bottom of pot (about 1/2 cup). Add onions and jalapeno and taco seasoning. Set instapot to cook for 20 minutes.

    Pull out cooked chicken and shred. Drain off any excess juice. Return to pot.

    Add all remaining ingredients including the juice from one lime. Cook an additional 5 minutes.

    Stir well to incorporate all ingredients. Place onto tortillas and enjoy warm or cold.
