Mixed vegetables with a yummy and crunchy addition of sev/fritters, toasted crisp to make the perfect breakfast or snack time sandwich

Peel and mash the boiled potatoes

Add them to a mixing bowl

Add in the tomatoes, onions, chillies,coriander leaves and seasonings

Mix all the ingredients well.

Preheat a sandwich maker or grill pan after greasing the surface with some oil/butter.

Apply about 1 tablespoon full of the mixture on one slice of bread slices.

Spread some cheese and top with about 1 tablespoon of nylon sev.

Place another slice of bread on top and toast on hot pan or sandwich maker till crisp

Serve while warm accompanied with some ketchup/chutnies along with a hot cuppa. Enjoy!
