Ingredients

Serves 15 servings
  1. Knafeh dough
  2. For the knafeh crust:
  3. 2 cupsfine semolina flour (about 320 grams)
  4. 2 tablespoonssugar
  5. 1 cupmilk (about 240 ml)
  6. 1/2 cupclarified butter or ghee (about 115 grams)
  7. Orange blossom water
  8. 1.1 lbsmozzarella cheese (about 500 grams)
  9. 1.1 lbsakkawi cheese, rinsed, soaked, and water changed (about 500 grams)
  10. For the syrup:
  11. 2 cupssugar (about 400 grams)
  12. 1 cupwater (about 240 ml)
  13. Squeezelemon juice
  14. 1 tablespoonrose water
  15. 1 tablespoonorange blossom water
  16. For garnish: pistachios

Steps

    Mix the sugar and fine semolina flour. Heat the milk and clarified butter or ghee, then add them to the mixture to form a cohesive dough. Spread the dough evenly in a baking pan and bake for 20 minutes until it dries out. Let it cool, then break it into pieces and grind it. Sift the mixture, then add orange blossom water until it comes together. Grease the baking pan with butter and sprinkle the crust mixture evenly.

    Press the mixture down firmly until it turns golden. Prepare the cheese mixture by combining mozzarella and soaked akkawi cheese (or just mozzarella). Spread the cheese over the crust and bake.

    Bake just until the cheese melts, then let it rest for 5 minutes. Flip onto a larger tray, pour the syrup over the top, and garnish with pistachios. Enjoy!
