I had to cook the local rice differently, first so that it doesn't come out "mashendehe"...(how do you say this in English), and second, for family to enjoy......and it came out super!😘😘

Measure your water and bring to boil. Heat your Sufuria, put some oil, add in your diced onions and the Cummin seeds and cook for around 5minutes.

Wash your rice, and add to your onions/Cummin and stir for around 5 to 10 minutes, so that they mix well as it cooks too.

Now add in the boiled water, stir and let it boil. When the water reduces, lower/reduce your heat (close the mouth/door of your Jiko) and cover your rice to let it cook. When the water reduces completely, remove from the Jiko, remove the lid, take a newspaper or two, dip in water, cover your Sufuria and place the lid on it, then put some hot charcoal onto the lid. After 10 - 15 minutes, the rice Wil be ready to serve with a dish of your choice. Enjoy.
