Ingredients

  1. 1/2 cupsugar
  2. 2 cupsflour
  3. 4 tspbaking powder
  4. 1/2 tspsalt
  5. 2 cupraisins
  6. 1/4 cupbutter
  7. 1 cupheavy cream
  8. 2eggs

Cooking Instructions

    Mix the dry ingredients with the raisins in a mixing bowl

    In a separate mixing bowl beat the eggs and slowly pour in milk and cream

    Mix the wet with the dry, in a few swift strokes. Given that this is a baking powder-leavened dish, it is imperative that you mix as rapidly as possible, so the baking powder doesn't give out. Pour into a buttered bread-loaf pan. Or in a 8by8 glass dish.

    Bake at 375°F for 45 minutes to an hour. Like cake, we're looking for a batter that you can stick a tester into and come out clean. Bubbat tastes best when hot. When using a 8by8 glass dish then check for doneness at around 35 minutes of baking.

When do you add the butter? Is it melted or rubbed into the dry ingredients? Also, there is no milk listed with the ingredients, although it is referenced in the instructions.
