This is easily one of my favourites - yummy and super easy to make. Introduced to me by a friend at a potluck, it has since been my go to recipe for a quick starter. Took me all of 15 minutes including prep time :)

This is easily one of my favourites - yummy and super easy to make. Introduced to me by a friend at a potluck, it has since been my go to recipe for a quick starter. Took me all of 15 minutes including prep time :)

Heat the oil in a pan over medium high heat. Add the chicken and season with salt and pepper to taste.
Cook the chicken for 5-6 minutes, breaking up the meat with a spatula, until mostly cooked through. - 2
Add diced onion to the pan. Cook for 2 minutes or until they are brown. Add ginger garlic paste and cook for 1 more minute.

In a small bowl, mix together the hoisin sauce, soy sauce, vinegar and sesame oil.
Pour the sauce over the chicken and mix well. - 4
Sprinkle the spring onions over the chicken.
Spoon the chicken into the lettuce leaves and serve. Hold together using a tooth pick.
