  1. 1 kgfine wheat groats, ground jreesh
  2. 1 teaspoonsalt
  3. Filling:
  4. 1/2 kgground meat
  5. 2 onions, finely ground
  6. 1 tablespoontomato paste
  7. 2 tablespoonsvegetable oil
  8. pepper
  9. black pepper
  10. salt
  11. Sauce:
  12. 1 onion, finely chopped
  13. 1 tablespoonvegetable oil
  14. 1/2 kgswiss chard, chopped with the stem
  15. 1 tomato, grated
  16. 1 teaspoondried mint, powder
  17. 1/2 teaspoonred pepper
  18. 1/2 teaspoonsalt

    Wash the wheat groats and drain, then add salt to it and leave aside.

    After 1 hour, knead the wheat groats with your hands or use a food processor, until it becomes dough like

    To prepare the filling, fry the onions in olive oil until soft then add in the ground meat, pepper, black pepper and salt.Stir for 5 minutes.

    Divide the wheat groats dough into walnut-sized pieces and roll into balls.

    With your finger make a hole in the middle of the ball and widen the hole by turning the ball and pressing it in your palm. Make sure the thickness of the shell is the same on all sides.

    Fill with about 2 teaspoons of filling and seal the sides together forming an oval shaped kibbehball or flat circular shape, set aside and repeat with the rest of the dough and filling.

    To prepare the sauce: fry the onion in vegetable oil until it’s golden, then add in the swiss chard, tomato, red pepper and salt. Pour 3 cups of water and bring to a boil.

    Drop the kibbehballs into the sauce, you can add a little bit of water if the sauce is too thick. Boil for 15 minutes.

    Sprinkle with dried mint before serving.

I am Syrian married to a Lebanese and living in Beirut. I am a mother of 3 children and a grandmother for 4 children.One of my daughters lives in Dubai, she loves my food and is always asking for recipes. This is how at my age, I entered the internet to be able to send recipes to my zeina, and of course chat with her when she is free. I also started adding recipes on shahiya instead of emailing them to her, this way she could also show them to her friends… Every Saturday, the whole family comes to my home for Lunch. I usually prepare food for the babies and food for the parents. on average I prepare 3 different choice of main dishes, salad, and dessert, we end up with more than 10 dishes on the table sometime. This is no pb for me, I don’t care if it takes me 10 hours to cook as long as my family enjoys the food. I can cook nearly all Lebanese dishes, and thanks to my Iraqi neighboord warda, I have become famous for my Iraqi recipes. Dishes I am famous for: Shiekh al Mahshi and Fatet el Batenjan
